No. Apple built the Apple Watch Ultra 3 in one size and one material only. Every Apple Watch Ultra 3 has a 49mm Grade 5 titanium case. There is no 42mm or 46mm Ultra 3 and there is no aluminum one. Case size and case material do change the price on the Apple Watch Series line. On this page they cannot, which is why the table has one price column instead of a grid.
Connectivity does not change the Apple Watch Ultra 3 price. Every Apple Watch Ultra 3 is GPS + Cellular, because Apple never made a GPS only version. Cancel the cellular plan before you post the watch. When you unpair the watch, your iPhone offers to remove the plan for you, and your carrier can remove it too. Leaving the plan running means paying every month for a watch you no longer own.
